PANCAKES. After a long week, there is nothing better than a stack of pancakes on a Sunday morning. They make a filling and balanced breakfast or a great sweet treat or snack. So below is my go-to pancake recipe topped with stewed berries, maple syrup and melted chocolate to fulfil all your weekend brunch needs.
You will need:
Self raising flour
Milk of your choice
Baking powder
1 egg
Mixed frozen berries
Maple syrup
Melted chocolate or chocolate spread of your choice
To make:
In a bowl, add 2-3 large tablespoons of self raising flour and 1 teaspoon of baking powder. Crack in the egg, add a splash of milk and mix. The mixture should be fairly thick, but add more for a thinner pancake consistency. Let it sit for 5 minutes whilst you heat a frying pan with a small amount of butter.
Meanwhile put a large handful of frozen berries in a saucepan with a splash of water and maple syrup and let it simmer on a low heat. Once the butter is melted, put a small circle of mixture in the frying pan. When bubbles start to form, flip the pancake. Add to a plate and put another in the pan. Layer each pancake with melted chocolate or spread as you pile them onto the plate. Top with the stewed berries and serve.
