If you are looking to add more plant-based recipes into your life or just love a good cookie recipe, this one is for you. These cookies are the perfect mix between crunchy and gooey, and just as effective when using vegan ingredients. A super quick recipe with maximum cookie-shaped results!
Gooey chocolate cookies
Makes 12
You will need:
200g plain flour
1.5 tsp baking powder
175g brown sugar
125g vegan butter
75ml oat milk
1 medium bar of chocolate of your choice (Vego, Galaxy’s vegan range or own brand white chocoalte are some of my favourites)
Preheat the oven to 190 degrees Celsius.
Add the butter and brown sugar to a bowl and mix until combined well.
Add the flour and baking powder slowly, mixing as you go.
Then add the milk until you form a thick cookie dough.
Roughly chop your chocolate and add to your mixture.
Line two baking Tracys, and transfer the mixture into 12 cookie dough balls.
Place in the pre-heated oven for 10-12 minutes. The cookies will still look gooey in the middle, but will set more as they cool.
