Really fancy a slice of cake with your cup of tea but without all the added sugar? This one is just for you then. If you are looking for a low sugar dessert that doesn’t substitute on taste, here’s the recipe for my Apple, plum and almond cake. Enjoy!

You will need:
A round baking tin (preferably a loose bottomed tin)
One apple (Jazz or Pink lady work well – something sweet and crunchy)
Three plums
Two Eggs
80g Self-raising flour
One teaspoon of baking powder
One tablespoon of olive oil
100g of butter/vegetable spread
60g of flaked almonds (plus a handful to decorate)
60g of granulated sweetener

To make:
Preheat your oven to 180 degrees.
In a mixing bowl, mix together your butter and granulated sweetener until fully combined. Make sure your butter is soft enough to do this.
Fold in the eggs and the oil.
Add the flour, baking powder and almonds and mix until combined.
Line your tin with grease proof paper and spoon in the mixture, spreading evenly around the tin.
Cut your plums into halves and peel and chop your apple into 8 or so pieces. Arrange these on top of the mixture as you like.
Bake in the oven for around 30-40 minutes or until the cake is golden and cooked through.
Leave to cool fully in the tin before topping with more almonds and serving.
